Dehydrating My Celery…

Dehydrated celery can be used so many ways…. All they need is soaked in hot water, and then cooked in a dish…

They are wonderful additions to soups! When cooking a dish with alot of liquid, I only need to drop the celery in and allow time to rehydrate and cook...

I kept my stalk slices separate from my leaf slices so I will be able to use them in different ways…

This is how I did mine J


1. I cut the celery into thin slices… about the thickness of a quarter…

2. I cut the leaves thinly… about the thickness of a dime… keeping them separate from the stalk slices…

3. I left the lighter green stalk ends, put them all in a baggy in the freezer to be used later on for soup stock…

 
4. I spread the slices out on the dehydrator trays…

5. I dehydrated them at 125 degrees for 10-12 hours or until they sounded very dry and crisp…

6. The end results had shrunk considerably! LOL

7. I funneled the bits into jars and used the vacuum sealer to suck out air…

my 3-2-1 cake making...

there are only 3 of us at home and a full size cake usually does not get fully eaten... i hate wasting food, or consuming the same thing 3 or 4 days in a row, individual servings would be wonderful!
so when i saw the 3-2-1 Cake Mix i was quite excited... i had seen other recipes for a Microwave Cupcake, but each one required an egg... lol... a bit rich...
the 3-2-1 Cake Mix is easy and quick, plus no egg... the basic recipe is at Duncan Hines...
the name refers to 3 Tbs mix, 2 Tbs H2O, and 1 min Micro... makes it pretty simple :)

being a Chocoholic, i mixed up some Chocolate 3-2-1 Cake Mix first... it was good but is better with the addition of cocoa powder, after tryin the Lemon tho, i might use pudding instead...

the Angel Food Cake mix adds a bit of a tart/bitter touch at the end of each bite so i figured a fruit or citrus mix would be good...
folks make it with all kinds of flavors... some even eliminate the Angel Food Cake Mix and use 2 regular Cake Mixes...

so i decided to try a Lemon 3-2-1 Cake Mix... after surfin around readin how others did theirs (most basically the same... lol) i decided to try it with the addition of Instant Lemon Pudding...
below is how i did it...

3-2-1 LEMON PUDDING CAKE MIX

Ingredients: (these are just the brands i found at the store)
Angel Food Cake Mix
Lemon Cake Mix
Instant Lemon Pudding

 
1. I put both cake mixes and the pudding into a gallon Ziploc bag.

 
2. After sealing and labeling, I squished and shook it around until thoroughly mixed.

I was done with the mix!  :)
I thought about putting it into an airtight decorative container or a mason jar, but so far they are still in the Ziploc... lol

TO MAKE A SERVING:
 

1. I put 3 Tablespoons of the mix into a cup or bowl (we usually use a ramekin and double the amount).

2. Then I add 2 Tablespoons water.


3. I mix until just combined. When I mix too much the cake falls flat or does not cook evenly.


4. Then I Microwaved on High for 1 minute. When I double the serving, a minute and a half works well.
 
5. I let it cool to whatever temperature I am in the mood for. I have topped them with Butter, Icing, Ice Cream, Cream... etc...
It is a delicate cake though, so I need a gentle hand when topping   :)

i usually eat it plain... i think the pudding mix added flavor and oomph... it is fluffy, moist, & tender...
a nice light flavorful cake...



Hello...

I will be using this section for my ideas and attempts at Food Storage and cooking recipes...
For instance... I just finished and trialed instant red beans and rice... Now that I know it worked, I will do a full batch, taking pics, maybe video, and post how I did it...
If I post a link it is an idea that interests me... If I post full directions and pics, I have previously prepared, trialed, and like what the post is about.
I hate reading a blog or watching a vid thinking that the person talking knows what they are talking about, only to find out that they are doing a test run...
Anyways... I hope I can get into the habit of doing this...  :)
